Instructions :

  • Mix flour with cinnamon, ginger, and baking soda. Add to creamed mixture alternately with the buttermilk. Pour batter into an eight or nine inch microwave secure glass pan.
  • Microwave for four to 5 mins on medium. Rotate 4 times even as cooking. Microwave 2 to a few mins on excessive. Cake is finished when a toothpick inserted into the middle comes out smooth. Serve heat or bloodless with Lemon Sauce.
  • To Make Lemon Sauce: Combine the white sugar and cornstarch. Stir till properly combined; upload water. Microwave 2 to a few minutes. Stir every 30 seconds, until combination has thickened and boiled for 30 seconds. Watch carefully so that it does no longer boil over. Add the final 2 tablespoons butter, lemon zest, and lemon juice. Serve warm or cold.
